在動物消化道中微量金屬元素離子與氨基酸類物質(zhì)常常形成11(M/M)的螯合物,也由于11(M/M)的不穩(wěn)定螯合物(H和強(qiáng)配位體的影響)金屬離子可以與其他非氨基酸配合物(如植酸、草酸、磷酸)形成穩(wěn)定而“無效”的螯合物不容易被動物吸收利用。不過氨基酸螯合物穩(wěn)定常數(shù)適中,有一定抗酸能力,克服植酸不利影響,有利于消化吸收。氨基酸螯合鐵的穩(wěn)定常數(shù)均界于4-10之間,這利于鐵的吸收、運(yùn)輸和利用。植酸與鐵結(jié)合的穩(wěn)定常數(shù)更高,這也是植物性飼料中鐵利用率極低的主要原因。動物對氨基酸螯合鐵的分子量要求范圍較寬。動物試驗已經(jīng)證明了甘氨酸鐵和蛋氨酸鐵的有效性,而它們的分子量分別是206 354。另外,當(dāng)動物處于特殊生理時期時(如初生時),可以以“胞飲”的方式吸收動物自身合成的大分子物質(zhì)(如乳鐵蛋白,分子量達(dá)到幾萬),這為氨基酸螯合鐵的實際應(yīng)用提供了又一理論基礎(chǔ)。

Effect of amino acid chelated iron on animal absorption

In the digestive tract of animals, trace metal element ions often form 1:1 (M/M) chelates with amino acids, and because of the 1:1 (M/M) unstable chelates (H and strong ligand), metal ions can form stable and "ineffective" chelates with other non-amino acid complexes (such as phytic acid, oxalic acid, phosphoric acid), which are not easy to be absorbed and utilized by animals. However, the amino acid chelate stability constant is moderate, has a certain acid resistance, overcome the adverse effects of phytic acid, is conducive to digestion and absorption. The stability constant of amino acid chelated iron is between 4 and 10, which is conducive to the absorption, transportation and utilization of iron. The stability constant of phytic acid combined with iron is higher, which is also the main reason for the extremely low iron utilization rate in plant feed. The range of molecular weight required by animals for amino acid chelated iron is wide. Animal studies have demonstrated the effectiveness of iron glycine and iron methionine, and their molecular weights are 206 and 354, respectively. In addition, when the animal is in a special physiological period (such as at the beginning of life), it can absorb the macromolecular substances synthesized by the animal itself (such as lactoferrin, with a molecular weight of tens of thousands) in a "pinocytosis" way, which provides another theoretical basis for the practical application of amino acid chelated iron.
