無機(jī)鹽、簡(jiǎn)單無機(jī)鹽形成的微量元素在被動(dòng)物攝入后,金屬離子需要載體分子與之構(gòu)成元素螯合物形式,才能穿過細(xì)胞膜。螯合分子內(nèi)電荷趨于中性,在胃腸道內(nèi)溶解性好,能迅速將微量元素運(yùn)送到腸道,利于小腸黏膜的吸收。Graff(1970)認(rèn)為,氨基酸螯合鐵的吸收率為無機(jī)鐵(亞鐵、碳酸鐵、氧化鐵)的4.9倍。Kegley等(2003)認(rèn)為,蛋氨酸鐵的生物有效性相當(dāng)于180%的亞鐵。Wedekind等(1992)的報(bào)告指出,蛋氨酸鋅之中鋅的生物利用率是鋅的206%。
